I had a leftover roasted red pepper that was already peeled, so I substituted that for one of the raw peppers. I also added a little bit of chopped onion. I’ve never grated red peppers like this, but it worked pretty well as a way to remove the peel. If I make this dish again, I won’t include the juice from the peppers, it seemed to make the sauce too juicy. I thought that cooking the peppers for a little longer would help evaporate some of the “juice”, but it actually became more watery the longer I cooked it. So I served it over a slice of bread to help sop up the juice – and it was very tasty nonetheless!
